Since my diagnosis of MTHFR I have been trying to up my intake of foods containing folic acid/folate to compliment the 1mg of folic acid and baby aspirin I take daily.  Green smoothies have been an easy way to do this and my two year old will happily drink them as well (it’s the only way I can get him to eat most vegetables).  I thought I’d share my “recipe” with you in hopes that you’d share your recipe with me.  What do YOU put in your green smoothies?

Green Smoothie

  • 1-2 cups of cream top, vanilla yogurt
  • whatever fruit I have on hand (apple, banana, berries, etc.)
  • ice
  • organic kale and/or spinach
  • raw, unheated honey (optional, but useful when fruit is tart)

Directions: Blend until smooth.  Add ice until you achieve desired consistency.

 

 

 

 

If you have a kiddo in your home that doesn’t like to eat vegetables but loves popsicles, put some of your green smoothie in an ice cube tray and freeze it.  G loves these treats (we don’t have real popsicles in our freezer) and requests them frequently.  All I do is take one out, put it in a bowl, cut it up if necessary and put him in his highchair (it’s messy).  Little does he know that he’s eating vegetables.  Bwuahahahahaha!

    I have been using a frozen banana, 4-5 large frozen strawberries, a palmful of raw almonds, a good squeeze of honey, about 2 handfuls of spinach and about 1-2 cups of almond or coconut milk and it’s like a shake, addictive and so yummy. It makes a lot but it holds me til lunch. Great way to start the day!

    Interesting, you don’t blanch your greens before freezing? I’ve always heard that’s a must if you’d going to freeze ‘em. Has something to do with lowering the amount of enzymes in the plant to keep them from spoiling.

  3. @Lorin – That sounds yummy! I def. should try adding almonds/coconut milk.

    @Erinn – Nope, I don’t blanch them. Maybe I should? Honestly, I can’t see them spoiling as these things don’t stay in my freezer very long. :)

    My recipe is pretty similar to yours. One container of greek yogurt, spinach, any frozen fruit I have on hand + a banana. Carrot juice or Naked’s Green Machine juice to get to consistency I like.

    Yesterday I made one that was good, but wasn’t “green”.
    Carrot juice, greek yogurt, a couple mandarins, a banana, frozen mango & peaches. Joseph got his carrots at dinner and so did I. I’ve also added whole baby carrots before as well.

    I’ve read one lady that adds free range raw egg yolk to her daughter’s smoothies as well (but only right before serving – she never freezes them with egg or yogurt) Freezing kills the enzymes in yogurt or something. idk.
